Repurposed Recipes: What Do I Do With All This Spinach?
Spectacular Spinach and Goat Cheese Dip
I thought I would try to make a fabulous pizza dip a little healthier recently, so I finely chopped up a bunch of fresh spinach. As I got ready to add it to the dip I realized that heated spinach gives off a ton of liquid and would water down our dip, so I took it back out again. Then I had a bunch of beautiful, chopped spinach looking for a use, so I decided it was time to come up with something new. Lucky for me, I had stuff in the fridge that I could use with it, and it was delicious.
Ingredients:
1 cup of fresh baby spinach, washed and finely chopped
2 ounces of goat cheese (cream cheese might work, too, but I have yet to try)
1/2 cup sour cream (more as needed to achieve the consistency you want)
2-3 leaves of fresh basil, washed and finely chopped (dry works, too)

1 clove finely chopped garlic (garlic powder can be used, if you must)
1/4 teaspoon (to taste) lemon pepper
pinch of Old Bay
black pepper to taste
pinch of kosher salt
Directions:
Mix all ingredients together with a fork or heavy spoon until well combined and smooth. The color will be a lovely, minty, green. Taste and adjust spices as needed.
Serve with crackers, pita, veggies, whatever you prefer.
